Ingredients
  

For the Taco Meat
  • 1 pound lean ground beef (80/20 blend recommended for best flavor)
  • 1 small onion, finely diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 2 tablespoons homemade taco seasoning (recipe below)
  • 1/4 cup water
  • 1 tablespoon tomato paste (optional, for richer flavor)
  • Salt and pepper to taste
For the Homemade Taco Seasoning
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika (smoked paprika for extra flavor)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Serving
  • 8-10 pieces taco shells (hard corn shells or soft flour/corn tortillas)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup fresh cilantro, chopped
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 piece avocado, sliced or mashed
  • Sour cream
  • Lime wedges
  • Hot sauce or salsa

Method
 

Preparation
  1. In a small bowl, combine all the taco seasoning ingredients: chili powder, cumin, garlic powder, dried oregano, paprika, onion powder, red pepper flakes, salt, and black pepper. Mix thoroughly until well combined.
  2. Prepare all toppings: shred the lettuce, dice the tomatoes and onions, chop the cilantro, slice the avocado, and grate the cheese. Arrange these ingredients in separate bowls for a taco bar setup.
Cooking
  1. Heat a large skillet over medium-high heat. Add the ground beef and break it apart while cooking for about 5-7 minutes until the meat is no longer pink.
  2. Add the diced onions to the skillet and cook for 2-3 minutes until they become translucent. Then add the minced garlic and cook for an additional 30 seconds.
  3. Sprinkle your homemade taco seasoning over the meat mixture and stir well to coat the meat evenly.
  4. Pour in 1/4 cup of water and add the tomato paste if using. Stir well to combine all ingredients.
  5. Reduce the heat to medium-low and simmer for about 5 minutes, stirring occasionally. If the mixture seems too dry, add a tablespoon or two of water.
  6. Prepare your taco shells according to package instructions.
Assembly
  1. Place the warmed taco shells on plates and fill each with a generous spoonful of the seasoned ground beef mixture.
  2. Let everyone add their preferred toppings starting with cheese, followed by lettuce, tomatoes, onions, cilantro, avocado, and a dollop of sour cream.
  3. Finish with a squeeze of fresh lime juice and a dash of hot sauce if desired.

Notes

For optimal flavor, toast your spices before adding them to the mix. Rest the seasoned meat mixture for 5 minutes off heat before serving.
