Method
Prepare and Marinate the Beef
- Place beef in the freezer for 20-30 minutes before slicing.
- Slice the partially frozen beef against the grain into thin strips.
- Combine sliced beef with cornstarch, soy sauce, rice wine, and baking soda in a medium bowl.
- Mix well and let marinate for at least 15 minutes.
Prepare the Sauce
- Whisk together all sauce ingredients in a separate bowl.
- Set aside until ready to use.
Prepare the Broccoli
- Bring a medium pot of water to a boil.
- Add broccoli florets and blanch for 30 seconds to 1 minute.
- Transfer to an ice water bath to stop cooking.
- Drain well and pat dry.
Cook the Beef and Vegetables
- Heat 1 tablespoon oil in your wok or skillet over high heat.
- Add marinated beef in a single layer, cooking in batches if necessary.
- Sear the beef for 1 minute without stirring, then stir-fry for an additional 1-2 minutes.
- Transfer beef to a plate and set aside.
- Add remaining oil to the pan and reduce heat to medium-high.
- Add sliced onion and stir-fry for 1 minute.
- Add minced garlic and grated ginger, stir-frying until fragrant.
Combine and Finish the Stir Fry
- Return the beef to the wok along with the blanched broccoli.
- Pour the sauce into the wok and stir-fry everything together for 2-3 minutes.
- Taste and adjust seasoning if needed.
- Remove from heat and transfer to a serving dish.
- Garnish with sesame seeds and sliced green onions.
Notes
Store leftovers in an airtight container for up to 3-4 days. Reheat in skillet or microwave, adding a splash of water or broth as needed.
