Beef and Broccoli Stir Fry

Ingredients
  

For the Beef and Marinade
  • 1 pound flank steak (or sirloin), thinly sliced against the grain Use a sharp knife for thin slices.
  • 1 tablespoon cornstarch
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice wine (or dry sherry)
  • 1 teaspoon baking soda (optional, for tenderizing)
  • 1 tablespoon vegetable oil
For the Sauce
  • 1/2 cup low-sodium beef broth
  • 3 tablespoons oyster sauce (substitute hoisin for different flavor)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
For the Stir Fry
  • 4 cups broccoli florets (about 2 small heads) Blanch for crispy texture.
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2-3 tablespoons vegetable oil for cooking Adjust according to preference.
  • sesame seeds and sliced green onions for garnish (optional)

Method
 

Prepare and Marinate the Beef
  1. Place beef in the freezer for 20-30 minutes before slicing.
  2. Slice the partially frozen beef against the grain into thin strips.
  3. Combine sliced beef with cornstarch, soy sauce, rice wine, and baking soda in a medium bowl.
  4. Mix well and let marinate for at least 15 minutes.
Prepare the Sauce
  1. Whisk together all sauce ingredients in a separate bowl.
  2. Set aside until ready to use.
Prepare the Broccoli
  1. Bring a medium pot of water to a boil.
  2. Add broccoli florets and blanch for 30 seconds to 1 minute.
  3. Transfer to an ice water bath to stop cooking.
  4. Drain well and pat dry.
Cook the Beef and Vegetables
  1. Heat 1 tablespoon oil in your wok or skillet over high heat.
  2. Add marinated beef in a single layer, cooking in batches if necessary.
  3. Sear the beef for 1 minute without stirring, then stir-fry for an additional 1-2 minutes.
  4. Transfer beef to a plate and set aside.
  5. Add remaining oil to the pan and reduce heat to medium-high.
  6. Add sliced onion and stir-fry for 1 minute.
  7. Add minced garlic and grated ginger, stir-frying until fragrant.
Combine and Finish the Stir Fry
  1. Return the beef to the wok along with the blanched broccoli.
  2. Pour the sauce into the wok and stir-fry everything together for 2-3 minutes.
  3. Taste and adjust seasoning if needed.
  4. Remove from heat and transfer to a serving dish.
  5. Garnish with sesame seeds and sliced green onions.

Notes

Store leftovers in an airtight container for up to 3-4 days. Reheat in skillet or microwave, adding a splash of water or broth as needed.
