  • 2 pounds ground deer meat
  • 1 cup breadcrumbs or crushed crackers
  • 2 large eggs
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup milk Can be replaced with almond milk for a healthier option.
  • 1/4 cup ketchup Can be substituted with sugar-free tomato paste.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground deer meat with breadcrumbs.
Mixing
  1. Add eggs, minced garlic, diced onion, milk, and seasonings to the meat mixture. Mix thoroughly but gently with your hands until just combined.
Forming
  1. Transfer the mixture to a 9x5 inch loaf pan, shaping it evenly and creating a slight depression down the center.
Glazing and Baking
  1. Combine ketchup and Worcestershire sauce, spreading it over the top. Bake for 1 hour or until internal temperature reaches 160°F (71°C).

Notes

Be sure to avoid overmixing the meatloaf to keep it tender. Let the meatloaf rest before slicing for the best texture.
