Method
 

Preparation
  1. Remove pork chops from refrigeration 30 minutes before cooking to allow even temperature distribution.
  2. Pat each chop completely dry with paper towels to ensure proper seasoning adherence and optimal searing.
  3. Combine kosher salt, black pepper, garlic powder, paprika, thyme, onion powder, cayenne, and brown sugar in a small mixing bowl. Whisk ingredients thoroughly.
  4. Brush both sides of each pork chop with olive oil and apply the seasoning blend generously.
  5. Allow seasoned chops to rest at room temperature for 15 minutes.
  6. Heat your gas grill to medium-high heat (400-450°F) or prepare charcoal for two-zone cooking.
  7. Clean grill grates thoroughly and oil them lightly to prevent sticking.
Grilling
  1. Place pork chops on the hottest part of the grill and sear for 3-4 minutes without moving them.
  2. Flip chops using tongs and cook for an additional 3-4 minutes.
  3. Check internal temperature, aiming for 145°F, and move to a cooler zone if needed.
  4. Remove from grill when internal temperature reaches 145°F and allow to rest for 5 minutes before serving.
