  • 1 teaspoon smoked paprika Gives a smoky depth.
  • 1 teaspoon cumin For a warm flavor.
  • 1/4 cup fresh herbs Such as cilantro or parsley.
For Serving
  • 1/2 cup salsa Store-bought or homemade.
  • 1/4 cup Greek yogurt For a lighter topping.
  • 1 lime cut into wedges For fresh squeezed flavor.

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Drain excess fat, if necessary.
  4. Stir in diced bell peppers and zucchini, cooking until softened.
Seasoning
  1. Sprinkle garlic powder, smoked paprika, cumin, and fresh herbs over the beef and veggies.
  2. Stir in the cooked brown rice (or quinoa) and black beans until well combined.
  3. Cook for an additional 5 minutes to heat through.
Serving
  1. Serve the beef mixture in bowls topped with salsa, a dollop of Greek yogurt, and lime wedges.
