Vegetables and Garnish

Method
 

Preparation and Marination
  1. Slice the beef against the grain into thin strips, approximately ΒΌ-inch thick.
  2. Combine soy sauce, gochujang, brown sugar, and cornstarch in a bowl.
  3. Toss beef strips with half of the marinade mixture and let rest for 15 minutes.
Prepare Aromatics and Sauce
  1. Mince garlic and grate fresh ginger while the beef marinates.
  2. Combine remaining marinade ingredients with sesame oil and 2 tablespoons water to create the finishing sauce.
  3. Prepare broccoli by cutting into uniform florets for even cooking.
  4. Slice green onions and toast sesame seeds in a dry pan for 2-3 minutes until fragrant and golden.
High-Heat Sear
  1. Heat vegetable oil in a large wok or skillet over high heat until smoking.
  2. Add marinated beef in a single layer and let cook undisturbed for 2 minutes.
  3. Stir-fry for another 2 minutes until beef reaches medium doneness.
Cook Broccoli
  1. Push beef to one side of the pan and add broccoli florets to the empty space.
  2. Stir-fry broccoli for 3-4 minutes until bright green and crisp-tender.
  3. Add minced garlic and ginger, cooking for 30 seconds.
Combine and Serve
  1. Pour the prepared sauce over the beef and broccoli mixture.
  2. Toss everything together for 1-2 minutes until the sauce thickens.
  3. Remove from heat and garnish with sliced green onions and toasted sesame seeds.

Notes
