Ingredients
  

For the marinade
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard optional
For the salmon skewers
  • 1 pound fresh salmon fillets, skinless and deboned cut into cubes
Serving suggestions
  • 1 cup cherry tomatoes for skewering
  • 1 cup bell peppers for skewering
  • to taste chimichurri or dill yogurt sauce for dipping

Method
 

Preparation
  1. In a bowl, mix together soy sauce, honey, minced garlic, lemon juice, and Dijon mustard to create the marinade.
  2. Add diced salmon to the marinade and let it sit for at least 30 minutes.
  3. While the salmon marinates, soak wooden skewers in water for 30 minutes if using a grill.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated salmon (and optional vegetables) onto the skewers.
  3. Grill the skewers for about 8-10 minutes, turning occasionally until the salmon is cooked through and flakes easily.
Oven Baked Option
  1. Preheat your oven to 400°F (200°C).
  2. Place the skewers on a lined baking tray and bake for 10-12 minutes, checking for flakiness in the salmon.
  3. Optionally, broil for 2 minutes for a golden top.

Notes

Serve with a simple green salad, rice pilaf or couscous, grilled vegetables, and some toasty bread for soaking up the marinade.
