- In a bowl, mix together soy sauce, honey, minced garlic, lemon juice, and Dijon mustard to create the marinade.
- Add diced salmon to the marinade and let it sit for at least 30 minutes.
- While the salmon marinates, soak wooden skewers in water for 30 minutes if using a grill.
Grilling
- Preheat the grill to medium-high heat.
- Thread the marinated salmon (and optional vegetables) onto the skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally until the salmon is cooked through and flakes easily.
Oven Baked Option
- Preheat your oven to 400°F (200°C).
- Place the skewers on a lined baking tray and bake for 10-12 minutes, checking for flakiness in the salmon.
- Optionally, broil for 2 minutes for a golden top.
