  • 1 pound lean ground beef (85/15 recommended)
  • 1 medium onion, diced (yellow or white)
  • 2 cloves garlic, minced (approximately 1 tablespoon)
  • 1 cup uncooked long-grain white rice
  • 2.25 cups beef broth (low-sodium preferred)
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 0.5 cup shredded cheese (optional, for topping)

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and break it apart with a wooden spoon. Cook for 5-7 minutes until no pink remains and the meat is nicely browned.
  2. Add diced onions to the browned beef and cook for 3-4 minutes until they become translucent. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add uncooked rice, oregano, and paprika to the skillet. Stir for 1-2 minutes to toast the rice slightly.
  4. Pour in beef broth and undrained diced tomatoes, then stir to combine. Bring the mixture to a boil, reduce heat to low, cover, and simmer for 15-20 minutes.
  5. Remove from heat and let stand covered for 5 minutes. Sprinkle with shredded cheese if using, cover, and allow to melt. Fluff the mixture with a fork before serving.

Notes

This dish can be customized with various substitutions and toppings. Options include ground turkey for leaner meat or brown rice with adjusted cooking time.
