- Heat olive oil in a large skillet over medium-high heat. Add ground beef and break it apart with a wooden spoon. Cook for 5-7 minutes until no pink remains and the meat is nicely browned.
- Add diced onions to the browned beef and cook for 3-4 minutes until they become translucent. Stir in minced garlic and cook for another 30 seconds until fragrant.
- Add uncooked rice, oregano, and paprika to the skillet. Stir for 1-2 minutes to toast the rice slightly.
- Pour in beef broth and undrained diced tomatoes, then stir to combine. Bring the mixture to a boil, reduce heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat and let stand covered for 5 minutes. Sprinkle with shredded cheese if using, cover, and allow to melt. Fluff the mixture with a fork before serving.
