  • 1 teaspoon sea salt
  • 1 cup beef broth
  • 1 medium onion, diced
  • 2 tablespoons butter

Method
 

Preparation
  1. Pat the meat dry with paper towels and season generously with salt and pepper. Let stand at room temperature for 15 minutes before cooking.
Searing the Meat
  1. Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the beef tips for 2-3 minutes per side until golden brown.
  2. Don't overcrowd the pan, as this will prevent proper browning.
Building Flavors
  1. Remove meat and set aside. In the same pan, sauté onions and garlic until translucent.
  2. Add Worcestershire sauce and thyme, scraping up any brown bits from the bottom of the pan.
Final Cooking
  1. Return meat to the pan, add beef broth, and simmer covered for 30-35 minutes or until tender.
