Cooking Fat

  • 2 tablespoons butter
Seasonings
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional) for added heat

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Method
 

Preparation
  1. Pat the pork chops dry with paper towels to remove excess moisture.
  2. Mix seasoning blend in a small bowl: combine paprika, Italian seasoning, garlic powder, onion powder, salt, pepper, and cayenne if using.
  3. Season both sides of each pork chop generously with the spice mixture.
Cooking
  1. Heat your skillet over medium-high heat and add olive oil until it shimmers.
  2. Place pork chops in the pan, avoiding overcrowding. Cook in batches if necessary.
  3. Cook for 2-3 minutes on the first side until golden brown.
  4. Flip and cook for another 2 minutes on the second side.
  5. Add butter and minced garlic to the pan; baste chops with the melting butter for about 1 minute.
  6. Check the temperature with a meat thermometer aiming for 145°F.
  7. Remove chops from heat and let them rest for 3 minutes.
  8. Drizzle with lemon juice and sprinkle with fresh parsley before serving.
